No - not a direct conversion.

.plotdoc was the old JSON project format and .plot is the newer binary Plotagon Studio project. When Plotagon switched formats it did not ship a converter, and current Studio can no longer even open .plotdoc files, so there is no supported way to turn a .plotdoc into a .plot.

Why convert PLOTDOC to PLOT?

Although both describe Plotagon projects, they are different generations of the app: .plotdoc is legacy JSON and .plot is the binary format that replaced it. Plotagon Studio dropped the ability to read .plotdoc, and no import or upgrade tool bridges the two, so the conversion simply does not exist. The realistic goal is to recover the project as a video instead.
